Sweet Chili Chicken Bowls

Sweet chili chicken bowls are a quick and easy meal with minimal prep! It’s ideal for a weeknight dinner and holds up well if you’re meal prepping.

Tips

  • Begin by preparing the rice first as that will take the longest to cook. Cooking times and speeds vary depending on your rice cooker.
  • You can also make the rice in a pot on your stovetop if you prefer to. However, having a rice cooker speeds up the process immensely and gives you time to prep other ingredients.
  • Sweet chili sauce, sometimes referred to as sweet Thai chili sauce, can often be found within Asian grocery stores or within the international aisle at your bigger box stores. It’s an ideal ingredient for proteins or to use as a dipping sauce.
  • Ground chicken is a bit mushier than other ground meats such as ground beef. Be sure to break up the ground chicken into little pieces as you are cooking.
  • Not feeling like rice? You can also serve the sweet chili chicken over noodles or a bed of shredded lettuce.

Ingredients

Rice:

  • 2 cups jasmine rice1
  • Water measured using index and middle fingers

Sweet Chili Chicken:

  • 1 lb ground chicken2
  • 2 garlic cloves minced
  • 1 tbsp ginger minced
  • 1 tbsp cooking oil vegetable or canola
  • ½ tsp salt
  • ½ black pepper
  • ½ cup sweet chili sauce
  • 1 tbsp sesame seeds
  • 2 green onions sliced

For Serving:

  • 1 cup romaine lettuce 4 leaves, shredded3
  • ½ cup red onion ¼ of a medium sized red onion, diced

Instructions

  • Prepare the rice. Add jasmine rice to your rice cooker pot. Rinse the rice under cool water at least three times or until the water runs clear. Place your index finger in the pot so that it is touching the bottom of the pot. Use your middle finger to measure the distance between the bottom of the pot and the top of the rice. Holding that same measurement, add cool water until it comes up to where your middle finger is placed on your index finger. The height of the water should be equal to the height of the rice. Place the pot into the rice cooker and turn on.
  • Mince the garlic cloves and ginger.
  • Wash the romaine lettuce and pat well to dry. Shred the romaine lettuce by rolling up and slicing thinly. Dice the red onion and slice the green onions. Set aside.
  • Heat a large non-stick frying pan or wok with cooking oil over medium heat. Once heated, add in the minced garlic and ginger. Cook for one to two minutes.
  • Add in the ground chicken. Break apart the ground chicken into little pieces. Cook for seven to eight minutes until completely cooked through. Add in the salt and black pepper, then pour in sweet chili sauce and mix well. Heat for two to three minutes, then turn off the stove and remove from heat. Top the sweet chili chicken with sesame seeds and sliced green onions.
  • Once your rice is cooked, build your bowls by adding in rice, sweet chili chicken, shredded romaine lettuce, and diced red onion.
  • Serve immediately.

Notes

  1. You can also use basmati rice or sushi rice, but note that the amount of water needed will vary depending on the type of rice.
  2. Substitute with ground beef or turkey instead.
  3. Substitute with iceberg lettuce, broccoli, or spinach.
